Breads
Our goal is to make breads how they should be made, bringing traditional baking methods to life.  Brick Oven Bakery’s breads are made with care by hand daily using natural ingredients and time-honored methods.  Our sourdoughs are naturally leavened and made using only three ingredients – flour, water, salt. The end result is bread that is fresher, healthier, and better tasting.  You’ll know when you take a bite.

 

Pastries
Every morning we serve a variety of fresh baked pastries. Some of our patron’s favorite pastries include fresh fruit danishes, chocolate croissants, ham and cheese croissants.  We also regularly serve up a variety of tarts made with seasonal fruits.  Aside from our regular offerings, our bakers are always trying their hand at delicious new creations. Stop in early for best selection and discover your favorite. All of our pastries are fresh made each day.

 

 We proudly offer Perk N Beans Espresso (an Ethiopian blend,) and our house blend coffee also from Perk N Beans perfectly compliments any pastry .

Where it all began

The journey for the best sourdough.

Steve and Sandy Jacobson live in Bismarck North Dakota and were married on leap day of 2012 and have three children.  Opening Brick Oven Bakery has been a dream for the couple for many years.

Steven has always had a passion for baking, ever since his early days baking with his mother making holiday pies and candies.  For years, Steven baked for friends and family.  Meanwhile, he had started and operated a landscape company.  After 16 years of successful operation, he realized it was time to fulfill his dream and true passion of baking.

Steven traveled to the world-renowned San Francisco Baking Institute to hone his craft.  He returned home inspired to share traditional bread making with North Dakota. It wasn’t long afterwards, with his wife and kids by his side, that Brick Oven Bakery opened it’s doors.

Brick Oven Bakery is housed at 112 N 4th Street in historic downtown Bismarck.  Steve and Sandy, along with lots of help from their family, personally renovated the space by hand to accomodate their bakery and cafe.  Like the bread and pastries themselves, the physical location is a labor of love.  The entire staff at Brick Oven Bakery invite you to visit.
